Pinot eruption 2010

Here is a great photo of the pinot erupting during ferment this year. This does not happen often but when it does it looks great and helps keep the cap wet.

Below is a photo of a microscope image taken this vintage of the mixed yeast types that occur at the beginning of the Pinot ferments. You can clearly see the apiculate (lemon shaped) yeasts as well as the round saccharomyces wine yeasts.
