Carême cooking classes are based at Palliser Estate, in a specially-dedicated room that takes up to twelve people.

The classes are about learning recipes that are flavoursome, but not fiddly, and they use ingredients you’ll be able to find easily. They are meals you’ll be able to easily recreate at home.

Your tutor is Jo Crabb, who has many years of experience running and catering for cafes in New Zealand and internationally.

The name ‘Carême’ stems from Jo’s love and experience of French food. Marie Antoine Carême was an eighteenth-century chef who invented the French concept of ‘haute cuisine’ – small and numerous courses of high-quality, simple yet tasty food.

On the day-long courses, you will get the benefit of Jo’s expertise on everything from how to whip up delicious vegetarian food, to the secrets of French cuisine, and how to make great bread. Or you can find out how to make food that’ll perfectly match your favourite bottle of Pinot at the ‘Pinot Noir Dinner Party’ course.

The course includes a wine tasting session and a sit-down lunch (with matching wines of course).
