Palliser Estate » Methode Traditionnelle Vintages » 2006 / 2007 / 2007

Made in the traditional methode, our Methode Traditionnelle is matured for two years on yeast lees before bottling. This time allows autolysis of the yeast, giving nutty, toasty aromas and characters. Citrus fruits characters and hints of peaches can be seen from the Chardonnay portion of the blend, while the Pinot Noir gives richness and depth. Fine bubbles will indicate the pedigree of our Methodes. A wine for celebrations and any time.
The twelveth Methode made at Palliser Estate, this wine is made with hand-picked Chardonnay and Pinot Noir from our Martinborough vineyards.
Straw-like in colour.
The bouquet is so reminiscent of Champagne, displaying yeast, cashew and subtle apple characters.
It's beautifully stylish and refined on the palate showing silky texture, crisp acidity and a exquisitely lingering finish. The wine is impeccably harmonious and delicate. What a stunner!
This Methode is made from hand-picked Pinot Noir and chardonnay grapes from our Martinborough vineyards.
The fruit was picked at that point of ripeness, which achieves both elegance and fullness of flavor. The base wine underwent complete malolactic fermentation and has spent two and a half years on yeast lees in the bottle.
Will still be drinking very well for up to three years...A perfect aperitif!
