Palliser Estate » Methode Traditionnelle Vintages » 2006 / 2007 / 2007

Made in the traditional methode, our Methode Traditionnelle is matured for two years on yeast lees before bottling. This time allows autolysis of the yeast, giving nutty, toasty aromas and characters. Citrus fruits characters and hints of peaches can be seen from the Chardonnay portion of the blend, while the Pinot Noir gives richness and depth. Fine bubbles will indicate the pedigree of our Methodes. A wine for celebrations and any time.
Bright, deep straw-yellow colour with green-gold hues, and a very fine persistent bead
This has a voluminous bouquet, lifted with white stonefruit and citrus fruit aromas and very fine, but intense yeasty, bready autolysis. There is delicacy to the aromatics but also concentration
Very dry on palate, this is tightly bound and quite elegant in body, with delicate citrus and floral flavours, beautifully balanced by definite, but finely expressed bready autolysis notes. The wine is one of finesse with gentle acidity and soft textures, the effervescence providing critical cut. A long, subtly nuanced finish epitomises the finesse
This Methode is made from hand picked pinot noir and chardonnay grapes from our Martinborough vineyards.
The fruit was picked at that point of ripeness, which achieves both elegance and fullness of flavor. The base wine underwent complete malolactic fermentation and has spent four years on yeast lees in the bottle, with a dosage of 8g/l rs
Will still be drinking very well for up to 3 years.
