Colour

Pale pink with a salmon hue and a delicate bead, lighter towards the edge.

Aroma

Strawberries and cream up front, before a suggestion of fennel and rose petals over a basket of summer red fruits, from cherries to Satsuma plum and raspberry. As the wine warms, there is a distinct aroma of freshly baked pastry.

Ageing Potential

Enjoy up to 8 years from vintage with canapés, risotto, oven baked salmon or a creamy brie.

Palate

Dry to taste, a delicate effervescence on the front palate conveys red fruits and raspberry liquorice, with a creamy mousse and biscuity sweetness fleshing out the middle. An energetic acidity binds everything together, finishing long, clean and refreshing.

Winemaking

100% Pinot Noir with 40% Abel clone coming off the Martins Vineyard, the remainder clone 5 from the Pinnacles Vineyard.  The wine undergoes complete malolactic fermentation and is aged on primary lees for 6 months then tiraged and left for 18 months on lees in bottle before being disgorged in March 2019
