Colour

Pours a pale salmon with a copper hue, the bead delicate and persistent.

Aroma

A complex and lively bouquet of wild raspberry, cherry, red currant and rose petals, with just a whiff of freshly baked bread crust and dried Mediterranean herbs.

Ageing Potential

Best enjoyed up to 6 years from vintage as a cleansing aperitif, or with canapes, smoked salmon or a crispy-skinned roast chicken and oven-roasted tomatoes.

Palate

Dry to taste, the wine is crisp, effervescent and fresh, dancing on the front palate before fattening out into a creamy, biscuity middle. The architecture of the acid keeps the palate focused, conveying the array of luscious orchard fruits towards the long, refreshing finish.

Winemaking

100% Pinot Noir with 40% Abel clone coming off the Martins Vineyard, the remainder clone 5 from the Pinnacles Vineyard.  The wine undergoes complete malolactic fermentation and is aged on primary lees for 6 months then tiraged and left for 18 months on lees in bottle before being disgorged in March 2020
