Palliser Estate Chardonnay 2004
This elegantly styled chardonnay was barrel fermented in French oak casks and remained on yeast lees for nine months. Spontaneous fermentation by indigenous yeasts was used on a portion of this wine to give added complexity. Like the highly acclaimed 2003 Palliser Estate Chardonnay, the wine was not put through a malolactic fermentation as the harvested grapes delivered the desired acid balance.
The wine has an enticing nose revealing a combination of ripe stone and citrus fruits with oak complexity. The palate has lovely freshness with excellent intensity and concentration combined with a seamless, smooth texture. The fullness and richness is balanced beautifully by lively acidity giving it a clean, long finish. It is a graceful and classy Chardonnay that is immediately drinkable but will keep well for a few years to come.
